Healthy + Low Carb Cauliflower Crust Pizza

It's officially time of year where you're trying really hard to be healthy and your successful for a week but then your cravings come back full force. Or is that just me?? I've been wanting to make cauliflower crust pizza for some time now, but I didn't have a food processor and I'm kind of lazy soooo I've been putting it off.

Luckily, I got the NutriBullet for Christmas so I knew it was finally time to try this out! This pizza is perfect to help satisfy your cravings, but still on the healthier side. Keep on reading to see how I made this soon-to-be-staple recipe!


This was seriously delicious! Mine ended up being a little more like cheesy bread (on the softer side), but I think if I got a little more water out and baked it a few minutes longer, it could get pretty crispy.



What You Need:
  • Half of a large head of cauliflower
  • 1/4 cup part-skim mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1 egg
  • 1/4 teaspoon salt
  • 1/2 teaspoon dry basil
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon garlic powder
  • 3/4 cup marinara sauce
  • 1/2 cup part-skim mozzarella cheese

How to Make It: 
Start by preheating your oven to 500 degrees Fahrenheit. 

Next, cut the cauliflower down the middle, remove stems from one half  and cut into chunks. Place the cauliflower into a food processor or a blender and pulse it until it resembles rice.



Microwave the processed cauliflower on high for 4-5 minutes. Remove it from the microwave and let it cool for at least 5 minutes. Then, once slightly cooled, place it in a kitchen towel and squeeze all of the liquid out. Make sure to get as much water out as possible! This will help the crust get crispier.

Next, combine the cooked cauliflower, egg, garlic, cheese and seasonings and stir until it forms a dough. Spread the cauliflower dough onto a lightly greased parchment paper or pie pan in the shape of a pizza.

Bake just the crust for about 15 minutes, until the crust is golden brown and crispy. Once golden brown, remove the crust from the oven and add your toppings. I went basic with marinara sauce and cheese, but you could go crazy here!

Put the pizza back in the oven for 2-5 minutes until the cheese melts. Slice, serve warm and enjoy!
